Ingredients
- 3 lbs fresh or frozen large shrimp
- 2 (7 oz) package frozen pea pods
- 3 chicken bouillon cubes
- 2 1/2 cup boiling water
- 1/2 cup chopped green onion
- 3 tbsp soy sauce
- 1 tsp salt
- 4 tbsp cornstarch
- 1/4 cup cold water
- 4 medium tomatoes, cut into 1/8's

Step 1
Thaw shrimp. Set aside.
Pour boiling water over pea pods and carefully break apart with fork; drain immediately.
In large saucepan, dissolve bouillon cubes in 2 1/2 cups of boiling water; add shrimp, onion, soy sauce & salt. Return to boiling; cook, uncovered for 3 minutes, stirring occasionally.
Blend together cornstarch and cold water; stir into shrimp mixture. Cook, stirring constantly until mixture thickens and bubbles. Add tomato wedges and pea pods. Cook until tomatoes are heated through (approx 3 minutes).
Serve over or with rice.
