Peanut Butter Sesame Squares

Ingredients
- 1 cup natural chunky peanut butter
- 3/4 cup frozen apple juice concentrate, thawed
- 2 large eggs
- 1 cup whole wheat flour
- 1/2 cup unbleached white flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 cup sesame seeds
- 1/3 cup fruit-sweetened jam or spreadable fruit

Preparation
Step 1
Preheat the oven to 350 F. Lightly butter and flour an 8-inch baking pan.
In a mixing bowl, blend the peanut butter and juice concentrate. Add the eggs and blend thoroughly. Add the flours, baking soda and baking powder to the bowl. Fold in the sesame seeds.
Pat the dough into the prepared pan and spread it evenly.
Stir the jam until smooth and drizzle over the dough.
Bake until the cake begins to pull away from the sides of the pan, 25 to 30 minutes.
When the cake has cooled slightly, remove it from the pan and cut into 1-inch squares.
The squares will keep, wrapped in plastic wrap, in an airtight container for up to one week or in the freezer for up to one month.
