Ingredients

  • 5 eggs
  • 4 egg whites
  • 1 small sweet onion, sliced or diced
  • 2 cups fresh spinach, chopped
  • 1/2 tsp dried parsley
  • 2-3 oz soft goat cheese
  • 1/4-1/2 Tbsp coconut oil or melted ghee (to grease muffin tins)
  • 1/2 Tbsp butter, for the onion
  • salt and pepper to taste

Preparation

Step 1

Preheat oven to 350. Grease muffin tins.

Slice/dice onion and place in a frying pan with 1/2 Tbsp butter. Cook on med-high heat, stirring constantly until they cook down.

Take onions off the heat and add the spinach until it welts, set aside.

Whisk together the eggs, egg whites, salt, pepper and parsley. Fold in the spinach/onion mix.

Fill the muffin tins half way, then crumble goat cheese on top.

Bake for 20-25 minutes until fluffy and light golden brown. Let cool in tins for 10 minutes and then use knife to loosen muffins, remove and transfer to plate to cool completely.
