- 3 pounds bone-in short ribs (about 4 pieces), trimmed of fat
- 1/4 cup honey
- 1/4 cup tamari
- 3 inch piece fresh ginger, peeled and thinly sliced
- 1 tablespoon Asian chili sauce or sambal oelek
- 6 cloves garlic, chopped
- 1 bunch scallions, sliced
- 12 ounces medium-thick rice noodles or sticks
- 2 limes, cut into wedges

Put ribs in lightly oiled slow cooker pot. Stir together honey, tamari, ginger, chili sauce, garlic, three-quarters of the scallions, and 1½ cups water. Pour over ribs. Cover and cook on low 7 to 8 hours or until ribs are fork-tender. Transfer ribs to cutting board and remove meat from bones. Skim fat from pot and reserve juices. Prepare noodles per package directions and drain. Toss with 1 cup reserved juices and divide among 6 serving bowls. Top evenly with meat, remaining scallions, lime wedges, and more juices.
