Ingredients

  • 2 carrots, peeled & sliced
  • 2 celery stalks, sliced
  • 2 medium onions, peeled & chopped
  • 2 cloves garlic, peeled & sliced
  • 1 3/4 lb sweet potatoes, peeled & chopped
  • 7 oz chorizo sausage, sliced
  • small bunch of fresh parsley, finely chopped
  • 1 3/4 quarts chicken broth
  • olive oil
  • 1 tsp (heaping) curry powder
  • sea salt & pepper
  • 1 fresh red chile, finely chopped

Preparation

Step 1

1) Add the broth to a saucepan and heat until boiling.
2) Put a large pan on HIGH heat and add 2 Tbsp olive oil. Add carrots, celery, onions, garlic, sweet potatoes, chorizo, parsley, & curry powder; mix well.
3) Cook 10-15 minutes until carrots have softened but are still holding their shape and onion is lightly golden.
4) Add boiling broth to vegetables. Stir and bring to a boil.
5) Reduce heat and simmer 10 minutes, until sweet potato is cooked through.
6) Season with salt & pepper.
7) Pour soup into blender or food processor; pulse until soup is smooth.
8) Scatter chopped chile on top.
