Broccoli & Pesto Tagliatelle

Ingredients
- 1 medium potato, washed, peeled, & cut into thin shavings
- 1 head of broccoli, cut into florets, and the stalk havled lenth-wise then thinly sliced
- large bunch of fresh basil
- sea salt
- 1 lb dried tagliatelle
- 1/4 cup green pesto
- 3 oz grated Parmesan cheese

Preparation
Step 1
1) Bring large pan of salted water to boil.
2) Add pasta & broccoli stalks and cook according to package directions.
3) 2 minutes before pasta is cooked, add broccoli florets & potato slices.
4) Drain everything in colander over large bowl, reserving some of the cooking water, and returning it to the pan.
5) Chop half of the basil leaves, and add it to the pan with water.
6) Add the pesto and half of the Parmesan. Stir the sauce, and add extra of the cooking water if the sauce is a little too thick.
7) To serve, sprinkle with remaining Parmesan & basil.
