Ingredients
- 1 cup raw, creamy almond butter
- 2/3 cup date sugar
- 1 - 2 tbsp. date paste (optional, for added sweetness)
- 1/4 cup unsweetened applesauce
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 1/4 tsp. salt (omit for healthier version)
- 2 tbsp. 80% vegan dark chocolate chips (sugar free)

Step 1
1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
2. Cream together almond butter and date sugar with an electric mixer until fully combined. Add in remaining ingredients and mix together until just combined.
3. Shape into 15 balls and place on tray. Flatten cookies and then bake in preheated oven for 8 minutes. (Do not over bake! Cookies will be very soft but will become more firm once cooled).
4. Allow cookies to cool on baking sheet for a few minutes before transferring to cooling rack. Cool completely and then store in airtight container. Enjoy with a glass of almond milk!
Note: This cookie can also be made without chocolate chips and tastes fantastic! It is also quite crumbly when warm but becomes more firm as it cools.
Note: Date sugar is essentially just dehydrated dates which are then ground to a powder, so it is still a whole food. These cookies can therefore be considered "sugar free".
