Ingredients
- 1 whole chicken, skinned and cut into pieces (save wings for chicken stock)
- 1 Fresno Red Pepper, seeded, deveined and chopped
- 4 large cloves garlic, chopped
- 1 Tbsp. fresh thyme, chopped
- 2 sprigs rosemary, stripped and chopped
- 2 Tbsp. olive oil
- salt and pepper
- bacon strips - enough for 1 strip per piece of chicken
- whole bay leaves - enough for 1 per piece of chicken

Preparation
Step 1
Mix all the marinade ingredients and marinade chicken pieces overnight.
Place a cooling rack over a baking sheet so heat can circulate.
Put one bay leaf on each piece of chicken. Wrap each piece of chicken with1 strip of bacon (it won't cover the entire piece - bay leaf will hang out)
Bake in oven at 375 degrees for 45 minutes or until bacon is crisp and chicken cooked through.
