Ingredients

  • 1/2 cup yogurt mixed with 1/4 cup milk
  • 1 egg
  • 2 3/4 cups flour
  • 4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter
  • 1 cup blueberries
  • 1/2 cup sugar
  • rind of 1 lemon

Preparation

Step 1

Preheat oven to 375 degrees F
Beat yogurt, milk, and egg in small bowl and set aside.
In large bowl, mix flour, baking powder, baking soda, and salt.
Cut in butter until mixture resembes small peas.
Mix in blueberries, sugar, and lemon rind.
Add yogurt mixture and stir until soft dough forms.
Using your hands, from dough into a circle 1 inch thick.
Place on ungreased cookie sheet.
Score into 8 wedges.
Bake 20 min.
