Ingredients
- 1 1/2 lbs beef boneless sirloin steak, about 1" thick
- 1 Tbsp olive oil
- 4 oz lean bacon, cut into 1/2" pieces
- 1 medium onion, chopped (1/2 cup)
- 1 medium green bell pepper, chopped (1 cup)
- 2 cloves garlic, finely chopped
- 1 Tbsp chopped fresh parsley
- 1 cup sweet red wine or beef broth
- 1 Tbsp balsamic vinegar
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 medium potatoes, cut into 1" pieces
- 1 medium carrot, thinly sliced (1/2 cup)
- 2 fresh or dried bay leaves

Preparation
Step 1
1) Remove fat from beef. Cut beef into 1" cubes.
2) Heat oil in nonstick 4-qt Dutch oven over medium heat.
3) Cook bacon, onion, bell pepper, garlic & parsley in oil about 10 minutes, stirring occasionally, until bacon is brown.
4) Stir in beef & remaining ingredients. Heat to boiling, reduce heat.
5) Cover & simmer about 1 hour, stirring occasionally, until beef is tender.
6) Remove bay leaves.
