Penne with Spicy Sauce

Ingredients
- 1 pkg (16 oz) penne rigate pasta
- 1 can (28 oz) Italian-style pear-shaped (plum) tomatoes, undrained
- 2 Tbsp olive oil
- 2 cloves garlic, finely chopped
- 1 tsp crushed red pepper (heaping)
- 2 Tbsp chopped fresh parsley
- 1 Tbsp tomato paste
- 1/2 cup freshly grated or shredded Parmesan cheese
- 3/4 lb bulk Italian sausage, browned & crumbled (optional)

Step 1
1) In 12" skillet, over medium-high heat, add 1 Tbsp olive oil & Italian sausage. Cook until sausage is no longer pink. Crumble & drain. Set sausage aside.
2) Cook & drain pasta as directed on package.
3) While pasta is cooking, heat 12" skillet over medium-high heat. Cook garlic, red pepper, parsley in oil about 5 minutes, stirring frequently, until garlic just begins to turn golden.
4) Stir in chopped tomatoes & tomato paste. Heat to boiling, reduce heat. Cover & simmer about 10 minutes, stirring occasionally, until slightly thickened.
5) Add pasta and 1/4 cup of cheese to mixture in skillet.
6) Cook about 3 minutes, tossing gently, until pasta is evenly coated.
7) Sprinkle with remaining 1/4 cup cheese.
