Coffee, Hazelnuts & White Chocolate Chip Cookies

These Coffee, Hazelnuts & White Chocolate Chip Cookies are perfect on a cold, blistery day with a hot cup of coffee or hot cocoa.

Ingredients
- 3/4 cup (1 1/2 stick) butter, softened
- 3/4 cup light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 2 yolks
- 1/2 tablespoon cold milk
- 2 teaspoons vanilla extract
- 2 drops almond extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 teaspoons instant espresso coffee powder
- 1 cup white chocolate chips
- 1 cup any nuts, roasted and chopped (hazelnuts work great)
Preparation
Step 1
Preheat oven to 350°F.
Cream the butter with the sugars, salt and coffee using an electric mixer on medium speed until fluffy, approximately 5 minutes. Beat in the egg and the vanilla extract for another 30 seconds.
In a mixing bowl, sift together the dry ingredients and beat into the butter mixture mixing with rubber spatula and folding movements. Stir in the espresso coffee powder and chocolate chips.
Using a 1-tablespoon measure, drop cookie dough onto a greased cookie sheet (I find helpful to use some parchment paper) about 2 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2-inch circle. Bake for about 14 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie.
Serve warm with a glass of milk.
