Waffles are great for breakfast but they also work for savory meal ideas. Try topping them with vegetables, greens, almond butter or hummus. I like to make waffles in larger batches and freeze the extras for later. You can pop them in the oven or toaster and eat them any time of day.


This waffle recipe is a wonderful breakfast before and after your cleanse. We don't use it during the cleanse because it includes eggs, but it makes a versatile lunch ingredient for our Clean Gut program. This program is outlined in Dr. Junger's book, Clean Gut.

Ingredients

  • 1/2 cup coconut flour
  • 1 1/2 cups almond meal/flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 3/4 cup almond milk or coconut milk, unsweetened
  • 6 tablespoons oil (melted coconut, olive, walnut, almond, etc.)
  • 2 eggs
  • optional toppings: coconut manna, almond or other nut butter, fresh or thawed frozen berries

Mix all ingredients together until well combined and smooth.

Step 2

Let batter sit for a few minutes while the waffle iron preheats. Use according to instructions for your waffle iron, generally pouring 1/2 cup onto the surface when the light indicates it's ready. Remove when the light changes (again, all according to your own waffle iron).

Step 3

Keep warm if serving immediately or once cooled, freeze for later use.
Clean Gut friendly waffle toppings: coconut manna, almond or other nut butter, fresh or thawed frozen berries.
Make sure they are completely cool before attempting to move or eat, otherwise they’ll fall apart.
