Ingredients
- 1 pkg (16 oz) fettuccine
- 2 Tbsp olive oil
- 2 Tbsp butter or margarine
- 4 medium green onions, chopped (1/4 cup)
- 1 Tbsp chopped fresh parsley
- 1/2 cup riccota cheese
- 1/2 cup crumbled feta cheese (2 oz)
- 3/4 cup shredded Asiago cheese
- 3/4 cup freshly grated or shredded Parmesan cheese
- 1/2 tsp pepper
- Chopped fresh parsley, if desired

Step 1
1) Cook & drain pasta as directed on pkg.
2) While pasta is cooking, heat oil and butter in 12" skillet over medium heat. Cook onions & 1 Tbsp parsley in oil about 4 minutes, stirring occasionally, until onions are tender.
3) Stir in ricotta and feta cheese; reduce heat to low. Cook about 2 minutes, stirring frequently, until cheese is melted.
4) Add pasta, Asiago & Parmesan cheese & pepper to mixture. Cook about 4 minutes, tossing gently, until cheese is melted and pasta is evenly coated.
5) Sprinkle with parsley.
