Ingredients

  • For Meyer Lemon Syrup:
  • 1 cup sugar
  • 1 cup filtered water
  • zest of 1 Meyer lemon
  • For mocktail:
  • 3 ounces Meyer lemon syrup
  • 4 ounces Meyer lemon juice
  • 1 ounce lemon juice
  • 20 club soda
  • cubed ice
  • Meyer lemon wheel, for garnish
  • sage sprig, for garnish

Preparation

Step 1

To Make Meyer Lemon Syrup:
Set a metal bowl over a pot to create a double boiler. Add enough water to pot to reach just below bottom of bowl. Add sugar, filtered water and Meyer lemon zest to bowl of double boiler and heat, stirring, until sugar is dissolved. Strain through a double-mesh sieve and set aside. Let cool.

To Make Mocktail:
Combine Meyer lemon syrup, Meyer lemon juice, lemon juice and 20 ounces cold, club soda. Serve in a Collins glass over cubed ice. Garnish with a Meyer lemon wheel and sage sprig.
