Step 1
TRIM MEAT OF EXCESSIVE FAT, MIX RUB TOGETHER AND APPLY TO MEAT WITH MEDIUM COAT PLACE INTO TUPPERWARE CONTAINER AND INTO FRIDGE OVER NIGHT.
COOK IN 350 F OVEN TILL AN I.T. OF 145- 155 F
OR
SMOKE AT 225 F WITH APPLE, OAK OR MAPLE WITH NO MORE THEN 3 HOURS OF SMOKE, CONTINUE COOKING TILL AN I.T. OF 150 F
