Ingredients

  • Dressing:
  • flour for dredging
  • oil for frying
  • 8 oz goat cheese, sliced into 1" thick rounds
  • 2 eggs, beaten
  • 1 cup pine nuts, finely ground
  • 1/2 cup lemon-flavoured mayo or use mayo
  • 2 tbsp lemon juice
  • 2 tsp poppy seeds
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 cups mixed greens, rinsed and dried

Preparation

Step 1

Preheat a large non-stick skillet over med-high heat. Add 2 tbsp oil to pan, Dredge each cheese slice in a little flour, then dip in egg, then coat with nuts. Gently place in hot oil and fry 1 min per side. Drain on paper towels. In small bowl, combine mayo, lemon juice, poppy seeds, salt and pepper. Toss baby greens with dressing and serve topped with goat cheese.
