Ingredients
- 2 tbsp fresh lemon juice
- 2 tsp chopped fresh oregano
- 2 garlic cloves, minced
- 8 4 oz. lamb loin chops, trimmed
- 1/4 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 2 tsp canola oil
- 1/2 c plain fat free yogurt
- 1 tbsp chopped fresh mint
- 1/2 tsp fresh lemon juice
- 1/8 tsp kosher salt
- 1 garlic clove, minced

Step 1
Combine the first three ingredients in a small bowl. Sprinkle the lamb with 1/4 tsp salt and pepper; rub with oregano mixture. Heat a large skillet over high heat. Add oil to pan, swirling to coat. Add lamb, and cook for 3 mins on each side or until desired doneness. Let stand for 5 mins.
Combine yogurt and remaining ingredients in a small bowl. Serve sauce with lamb.
