Homemade Salsa**

Ingredients
- Tomatoes - approx. 20
- Green peppers - 3
- Vidalia or Sweet Onion - 1 large
- Jalapeno Pepper - 1
- Garlic - 2 or 3 cloves
- Cilantro - a few sprigs (add alittle at a time and taste before adding more)
- Lime Juice - 1
- Salt and Pepper to taste

Preparation
Step 1
Prepare the tomatoes first by:
1. Turn the stove and begin boiling the water. Prepare and ice bath high enough to cover the tomato.
2. Clean the tomato of any debris and remove the tomato stem by twisting it off.
3. Score the bottom of the tomato with a paring knife. Do this by cutting an X on the bottom of the tomato.
4. Immerse the scored tomato in boiling water. Leave it in the boiling water for 30 to 45 seconds.
5. Remove the tomato immediately and place it in the cold bath.
6. Remove the tomato from the ice bath and peel away the skin with your fingers. It should come right off.
Salsa:
1. Put tomatoes in food processor and pulse for 6 presses and put in bowl.
2. De-seed green peppers and pulse in food processor, add to bowl.
3. Food process the onion as well
4. Jalapeno - de-seed and add to food processor
5. garlic - use garlic press
6. cilantro - use food processor
7. Lime - use my juicer
8. Salt and pepper - add
