Ingredients

  • 2 cans white beans
  • 2 cans chicken broth
  • 1 clove garlic, minced
  • 1 onion, chopped
  • 4 oz. chopped green chilies
  • 1 tsp. cumin
  • 1/4 tsp. cayenne pepper
  • 3/4 tsp. oregano
  • 1/8 tsp. cloves
  • 2 Tblsp. oil, divided
  • 2 cups diced chicken breast
  • Shredded cheese, sour cream, and salsa for garnish

Step 1

Combine beans, broth, and garlic in large pot. In a skillet, sauté onion in 1 Tblsp. oil. Add green chilies and seasonings. Simmer and stir often for about 5 minutes. Add this mixture to the broth mixture. Using the same skillet, add 1 Tblsp. oil and cook the diced chicken breast. Add to the broth mixture. Let simmer for at least an hour. Garnish with shredded cheese, sour cream, and salsa.
