Ingredients

  • 1 egg
  • 3 cups mixed lettuce, including frisée
  • 2 slices bacon, cut into lardons, about 2 ounces
  • 1 1/2 tbsp. red wine or balsamic vinegar (DON'T use Vin Cotto - It caramelizes and creates a huge, sticky mess)
  • 2 tsp. EVOO
  • salt and pepper to taste

Preparation

Step 1

* Fry the bacon in a sauté pan until crisp, about 5 minutes. Deglaze the pan with the vinegar and boil to reduce to about 2 teaspoons. Add the oil to make a dressing. Toss the greens in the pan for a few seconds just to coat– don’t let them wilt.

* Plate and top with a poached egg and season with fleur de sel and freshly ground pepper.

* Serve with a slice of toasted good bread, if desired.
