Ingredients
- 4 servings
- 8 oz. ground turkey
- 1/2 cup chopped onion
- 1/4 cup diced sweet peppers
- 1/2 cup frozen or canned corn
- 2 cloves garlic, minced
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/4 tsp. ground chipotle chile pepper or dash chipotle tabasco sauce
- 1 can canned black beans, rinsed and drained
- 1/2 can aurora tomatoes
- 1 recipe cornbread for two for each serving of two
- 1/2 tsp. chipotle tabasco sauce and 20 grams shredded light Tex-Mex cheese blend - added to each batch of cornbread

Step 1
* Cook turkey in a large non-stick skillet over medium-high heat until browned, stirring to crumble. Add onion, corn, and garlic to pan; sauté 2 minutes. Stir in chili powder, cumin, and chipotle; cook 30 seconds. Add beans and tomatoes to pan; cook 1 minute.
* Divide turkey mixture in two and freeze one half. Divide remaining mixture evenly between 2 (1 1/2-cup) ramekins coated with cooking spray.
* Preheat Breville oven to 375 with rack in bottom position.
* Spoon cornbread batter evenly over turkey mixture. Place the ramekins on a baking sheet. Bake at 375° for 35 minutes, covering loosely with foil after 20 minutes.
