    oz firm silken tofu

  • 1

    cream cheese

  • 2/3

    C lemon juice

  • 1/2

    tsp almond extract

  • 2

    Tbsp cornstarch

  • 9

    " prepared pie crust

Directions

Preheat oven 350 degrees Blend tofu and cheese in processor for 1 min. Then add sugar and process till smooth and no sugar granules are left - about 3-5 mins. In separate bowl, combine lemon juice, & almond extract. Whisk in cornstarch. Pour mixture into processor and mix till very smooth. Pour into pie crust and bake 45 mins. Cool at room temp for 2 hours then refrigerate overnight.
