Step 1
Whisk together 1/2 c all purpose flour, 1/2 tsp ground nutmeg, 1/4 tsp salt. Beat together 1 c fat free milk and 2 large eggs that are lightly beaten. Whisk milk mixture into flour mixture until smooth. Let stand 15 minutes. THen spray 8 inch non stick skilllet with non stick spray and set over medium heat until a drop of water sizzles. Re stir batter, pour a scant 1/4 c of batter into skilled, tilting pan to coat completely. Cook until top is sete and underside is golden brown, about 1 1/2 minutes. With spatula loosen edge of crepe and turn over. Cook until second side is lightly browned, about 25 seconds. Then done. NOTE: Can be sweet or savory. Generally they are filled with sweet jam or sliced berries and bit of whipped cream with powdered sugar.. Can add mascarpone with chocolate chips, mutella or peanut butter with sliced banana, syrup and finely chopped pecans or other nuts, cream cheese. Can be savory and add egges any way I like them with snipped herbs, deli meats and romaine lettuce, sauteed vegies like mushrooms, potatoes, onions, grated carrrots with brie and baby spinich, shredded cooked chicken and pesto, tuna salad, anything I can think of.
