Chicken Parmesan

Bob made while I was sick. Delicious.
Dijon mustard, apple juice, Parm cheese, ground almonds, and garlic form a crispy delicious coating. Make sure you use SOFT FRESH bread crumbs, not the dry crumbs from a can.

Ingredients
- 1/2 c. dijon mustard
- 1/4 c. apple juice
- 2 cloves garlic, minced
- 2 T. butter, melted
- 2 c. fresh soft bread crumbs
- 3/4 c. grated Parm
- 1/4 c. ground almonds
- 3 T. butter, melted
- 1/2 t. salt
- 1/8 t. pepper
- 1 tsp. dried basil
- 8 boneless, skinless, chicken breast halves.

Step 1
Line a 13x9" pan with heavy duty aluminum foil and add a wire rack.
Preheat oven to 375 degrees.
In shallow pan, mix mustard, juice, garlic, and 2T. melted butter.
In another pan mix crumbs, Parm cheese, almonds, 3 T. melted butter, salt, pepper, and basil. Toss till evenly mixed.
Coat chicken in mustard mix, then bread crumb mis until thoroughly coated.
Place on rack. Bake 25 to 30 min. until golden brown and thoroughly cooked.
