Ingredients
- 1 cup water
- 1/2 cup butter, cut into pieces
- 1/4 tsp salt
- 1 cup flour
- 4 large eggs
- 1 1/2 cups coarsely grated aged Gouda or Asiago cheese

Step 1
In a medium saucepan, bring the water and butter to a boil over medium-high heat. Turn the heat down to low and add the flour all at once. Stir with a heat-proof spatula or wooden spoon until the mixture pulls away from sides of pan.
Transfer the mixture to a food processor and beat in the eggs, one at a time, beating well after each addition. The batter should have the consistency and colour of thick cake batter. Preheat the oven to 375F and spray two baking sheets with non-stick baking spray or line them with parchment paper. Blend the cheese into the pate a choux in the food processor and drop spoonfuls an inch apart on the prepared baking sheets.
Bake for 25 - 30 minutes, or until puffed, golden and crisp.
