Ingredients
- 10 oz pkg frozen peas, defrosted
- 1/2 cup grated Parmesan
- 1 garlic clove
- 1/4 cup fresh mint leaves
- 1 tsp coarse salt, plus extra for seasoning
- 1/4 tsp freshly ground pepper,m plus extra for seasoning
- 1/3 cup olive oil
- 1 baguette, sliced into 1/2" thick slices
- Additional extra-virgin olive oil, for drizzling

Step 1
Preheat oven to 375F. Line a baking sheet with parchment paper, if using, and place the baguette slices on top in a single layer. Bake in the oven until toasted and golden, about 10 minutes. Remove and drizzle or brush with additional olive oil.
As the baguette slices toast, add the peas, Parmesan, garlic, mint, salt and pepper in the food processor and pulse to combine. While it is running, slowly add the olive oil until well combined, about 1 to 2 minutes. Transfer to a bowl and set aside. Scoop mint and pea mixture onto the crostini and serve.
