vanilla mousse cheesecake
- 40 vanilla wafers, crushed
- 3 T butter, melted
- 4 pkgs 8oz phil cream cheese, softened
- 1 cup sugar, divided
- 1 T plus 1 t. vanilla, divided
- 3 eggs
- 8 oz, cool whip
325*.. mix wafter crubs with butter.. press into bottom of 9 inch springform pan..
beat 3 pkg cream cheese, 3/4 cup sugar and 1 T. vanilla with mixer until well blended.. add eggs, 1 at a time, mixing on low speed after each til blended.. pour over crust.
bake 50-55 min. or until center is almost set. run knife around rim of pan to loosen cake, cool completely..
beat remaing cream cheese, sugar and vanill with mixer in large bowl til well blended. whisk in cool whip, spread over cheesecake. refrig. 4 hours.
