Ingredients

  • 2 cups shredded rotisserie chicken
  • 1/4 cup plain greek yogurt
  • 1/4 cup canola mayonnaise or regular mayonnaise
  • 2 tsp fresh dill
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 3 green onions sliced
  • whole wheat English muffins, split and toasted
  • 3 oz. sharp shredded cheddar cheese about 3/4 cup
  • 3/4 cup thinly sliced apples
  • 6 Bibb lettuce leaves

Preparation

Step 1

Preheat oven to 450.
Combine the first 7 ingredients in a bowl and stir well.
Place ⅓ cup chicken on the bottom half of the muffin. Top with cheese. After it melts put on the apple and lettuce and close.
