Ingredients
- 1 medium sweet onion, chopped
- 1 large red bell pepper, chopped
- 3/4 cup sugar
- 3 canned chipotle peppers in adobo sauce
- 1 Tbsp. salt
- 1 Tbsp. coriander seeds, crushed
- 1 Tbsp. country Dijon-style mustard
- 4 cloves garlic, smashed
- 6 who;e cloves
- 2 cups white wine vinegar
- 1 cup water
- 1/2 cup unsweetened pineapple juice
- 6 ears fresh corn, cut into 1/2" rounds

Step 1
In a stainless-steel pot combine all ingredients except corn. bring mixture to boiling, stirring to dissolve sugar and salt. Add corn; return to boiling. reduce heat; simmer, covered, for 5 minutes.
Transfer corn, onion, and peppers to three 1 quart glass jars. Pour pickling mixture over vegetables; cool. Cover; chill overnight.
