Ingredients
- 1/2 lb. green beans
- 1/2 lb. yellow beans
- sea salt
- 1/4 cup olive oil
- 1 tbsp. fresh lemon juice
- 1 tsp. fresh thyme
- freshly ground black pepper
- 1/2 cup chopped toasted walnuts
- 1/4 cup crumbledd goat cheese

Step 1
Blanch the beans in a pot of heavily salted water, then shocck them in cold water and set aside.
In a large bowl, combine the olive oil, lemon juice, and thyme with a pinch of sea salt and freshly ground pepper.
Toss the beans in the dressing and sprinkle them with the toasted walnuts and crumbled goat cheese.
Toss again and serve immediately.
