Honey-Whole Wheat Walnut Bread

Ingredients
- 2 1/4 teaspoons instant yeast
- 1 cup + 2 tablespoons water
- 3 tablespoons butter
- 2 tablespoons (1 1/2 ounces) honey
- 3 cups King Arthur 100% White Whole Wheat Flour
- 1 1/4 teaspoons salt
- 1 cup (4 ounces) diced walnuts, toasted* and crushed

Step 1
*To toast walnuts, bake in a preheated 350 degree F oven for 8 to 11 minutes, until they'n smell toasty.
In a large bowl, combine all of the ingredients and stir till the dough starts to leave Knead the dough---by hand, in an electric mixer, or in a bread machine programme cycle---until it's smooth (aside from the walnuts), and supple. Transfer the dough to bowl, cover the bowl, and allow the dough to rise till puffy though not necessarily d 1 to 2 hours, depending on the warmth of your kitchen.
Transfer the dough to a lightly oiled work surface, and shape it into an 8-inch log. P lightly greased 8 1/2 x 4 1/2-inch loaf pan, cover the pan loosely with lightly grease proof cover, and allow the bread to rise for 1 1/2 to 2 hours, until it's domed over th
Bake the bread in a preheated 350 degree F oven for about 35 to 40 minutes, until it's light interior temperature should register 190 degree F when measured with an instant-read the the bread from the oven, and transfer it from the pan to a rack to cool before slicing
