- 7.9 oz. all purpose flour
- 3/4 c granulated sugar
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 c part skim ricotta cheese
- 1/2 c water
- 1/4 c olive
- 1 tbsp grated lemon rind
- 2 tbsp fresh lemon juice
- 1 large egg, lightly beaten
- Cooking spray
- 2 tbsp turbinado sugar

Step 1
Preheat oven to 375 degrees.
Combine flour, sugar and baking powder. Make a well in the center. Combine ricotta and next 5 ingredients (through egg). Add ricotta mixture to flour mixture, stirring just until moist.
Coat muffin tin with cooking spray. Divide batter among 12 muffin cups. Sprinkle with turbinado sugar over batter. Bake at 375 degrees F for 16 mins or until a wooden pick inserted into the center comes out clean. Cool 5 mins on a wire rack.
