Ingredients
- 3 cups all-purpose flour
- 3 cups granulated sugar
- 1 tbsp grated orange rind
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 3/4 tsp salt
- 1/3 tsp ginger
- 1/4 tsp allspice
- 1/8 tsp ground cloves
- 1 cup vegetable shortening
- 1 cup orange juice
- 2/3 cup light molasses
- 3 large eggs
- 1 1/2 cup fresh or frozen cranberries
- 1/2 cup shredded carrots
- 3/4 cup chopped pecans

Step 1
Preheat oven to 350 F. Grease and flour a 10-inch tube pan.
In a bowl, mix together flour, sugar, orange rind, baking powder, baking soda, cinnamon, salt, ginger, allspice and cloves. Add shortening, orange juice and molasses. Beat 2 minutes with an electric mixer at medium speed, mixing thoroughly. Add eggs; beat 2 minutes more. Stir in cranberries, carrots and pecans.
Pour into pan; bake 1 hour or until a toothpick inserted in the center comes out clean.
