Pork Chops - Beer Marinated Chops with Cheddar

Ingredients
- 4 bone-in pork rib or loin chops, cut 1 1/4" to 1 1/2" thick
- 1 12-oz. bottle honey-wheat beer
- 1 Tbsp. olive oil
- 2 cloves garlic, minced
- 1/2 tea. black pepper
- 1/4 tea. salt
- 1 cup shredded white cheddar cheese or crumbled blue cheese (4 oz)
- 1/4 cup thinly sliced green onions (2)

Step 1
Trim fat from chops. Place in a zip lock. For marinade, in a medium bowl combine beer, oil, garlic, 1/4 tea. pepper and salt. Pour marinade over chops; seal bag. Marinate in the refrigerator overnight, turning bag occasionally.
For cheese topping, combine cheese, green onions, and remaining 1/4 tea. pepper.
Drain chops, discard marinade. Prepare grill, arrange medium-hot coals around a drip pan. Place chops on grill rack over drip pan. Cover and grill for 35-40 minutes or until chops are slightly pink in center and juices run clear (160 degrees).
Carefully spoon cheese topping over chops. Cover and grill for 2-3 minutes more or until cheese is melted.
