Ingredients
- 1 cup Whole wheat flour
- 1/2 teaspoon baking soda
- 1 1/2 cups rolled oats
- 1 teaspoon cinnamon
- 1 teaspoon dry ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 2 egg whites
- 3/4 cup dark brown sugar
- 1/4 cup vegetable or canola oil
- 1/2 cup skim milk
- 2 teaspoons vanilla extract
- 1 cup raisins
- 1 cup grated carrots
- 3/4 cup crushed walnuts

Preparation
Step 1
Preheat oven to 375 degrees
In a medium bowl, combine flour, baking soda, oats, cinnamon, ginger, cloves and nutmeg
In a separate bowl, combine egg whites, brown sugar, oil, milk and vanilla. Slowly add mixture to dry ingredients and stir until well mixed. Add in raisins and carrots
Drop by rounded spoonfuls onto lightly greased baking sheets and sprinkle top of cookies with crushed walnuts.
Bake for 12 to 15 minutes or until golden brown and slightly firm.
