Grandma Hiers' Carrot Cake

By

WONDERFUL Cake!!! It is perhaps the very best Carrot Cake I've ever eaten, and I LOVE CARROT CAKE! I needed a sheet cake, and made it in my RV in my Sharp Convection/Microwave oven, and it baked perfectly as well in about 35 minutes. PERFECT!!

1 stick salted butter, room temperature
1 (16-ounce) box powdered sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans
