Ingredients

  • 1 cup graham cracker crumbs
  • 3 T margarine, melted
  • 2 cream cheeses
  • 1/2 cup sugar
  • 1 T lemon juice
  • 1/2 tsp. vanilla
  • 2 eggs, separated

Preparation

Step 1

Combine crumbs and margarine. Press to bottom of 9 inch pan. Bake at 325 degrees for 10 minutes. Combine cream cheese, sugar, juice and vanilla. Mix at medium speed of mixer until well blended. Add egg yolks 1 at a time, mix well. Fold in stiffly beaten egg whites with mix. Pour over crust.. Bake at 300 degrees for 45 minutes.

*For cheesecake add 1 tsp grated vanilla rind with juice, vanilla, cream cheese and sugar
