Ingredients
- 1 beef brisket, about 3 lb.
- 1 Tbsp. paprika
- 1 tea. salt
- 1 /2 tea. pepper
- 3 Tbsp. chili powder
- 1 green pepper, chopped
- 1 large onion, chopped
- 4 cloves garlic, chopped
- 1 can (14/5 oz) fire roasted diced tomatoes
- 1 can(14.5 oz) beef broth
- 1/4 cup cider vinegar
- sour cream, optional
- shredded cheddar, optional

Preparation
Step 1
Coat slow cooker with nonstick cooking spray.
Season brisket with paprika, salt and pepper. Place in slow cooker. Scatter onion, green pepper and garlic over brisket. Combine chili powder, tomatoes, broth and vinegar. Pour over brisket.
Cover and cook on high for 6 hours or low for 9 hours.
Remove meat from slow cooker nd cool slightly. Slice or shred and stir into sauce.
Remove brisket with a slotted spoon and serve with sour cream and shredded cheese if desire.
