Oven Roasted Potato Salad

Ingredients

  • 4 cups quartered red potatoes
  • 4 slices bacon – fried & crumbled
  • 1/4 cup sliced green onions
  • 2 hard boiled eggs – chopped
  • 1 cup mayo
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Preparation

Step 1


Heat oven to 425. Place potatoes on baking sheet sprayed with Pam. Bake 30-35 minutes or until potatoes are golden brown and tender – stirring once. Mix mayo, salt and pepper, bacon & eggs in a large bowl. Add potatoes. Mix lightly. Serve warm or cold. Serves 6
