Ingredients
- 2 cup(s) Uncooked penne
- 2 Tbsp Margarine, reduced-calorie
- 1 medium Shallots, raw, finely chopped
- 1 medium Plum tomatoes, peeled and chopped
- 1/4 cup(s) Chicken, broth, reduced sodium
- 1 Tbsp Tomato paste, canned with salt added
- 1/4 tsp Pepper flakes, red, crushed
- 1/4 cup(s) Cream, whipping, heavy
- 1 oz Vodka, 2 Tbsp
- 1/4 cup(s) Tomatoes, fresh, diced
- 2 Tbsp Cheese, parmesan, freshly grated
- 2 Tbsp Parsley, flat-leaf, minced

Step 1
. Cook the penne according to package directions; drain and keep warm.
2. Meanwhile, melt the margarine in a medium nonstick skillet, then add the shallot and tomato. Sauté until softened, about 5 minutes. Add the broth, tomato paste, and pepper. Reduce the heat to low, then add the cream and vodka. Cook, stirring constantly, until just heated through (do not boil). Pour the sauce over the penne and toss to coat. Sprinkle with the diced tomato, cheese, and parsley and serve at once. Yields 3/4 cup per serving
