Family Favorite Meatloaf

This meatloaf makes a great meal with mashed potatoes and green beans or a tossed salad. It's an easy meat loaf to mix up, perfect for any day of the week.

Ingredients
- 1 1/2 pounds lean ground beef
- 1 cup soft fine bread crumbs
- 1 large egg
- 1/2 cup ketchup (plus more for topping, if desired)
- 2 teaspoons spicy brown mustard or Creole mustard
- 1 medium sweet onion, finely chopped
- 1/2 red bell pepper, finely chopped
- 1 teaspoon Cajun or Creole seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried leaf oregano

Preparation
Step 1
Heat oven to 350°.
Combine all ingredients in a large bowl; work together with hands until thoroughly blended. Pack into a meatloaf pan or a 9x5x3-inch loaf pan and bake for 1 hour.
If desired, spread about 1/2 cup of ketchup over the top of the loaf about 15 minutes before the meat loaf is done. Serves 6.

I enjoyed making this recipe almost as much as I enjoyed eating it. I use to pay over $10 to buy a prepared meatloaf and mash potato dinner from SAM'S CLUB but not anymore. This taste better than Sam's are they are rarely consistent with the taste. I followed the recipe which I rarely do and it was delicious. Next time I'm going to experiment a bit and get creative.
Easy and delicious! I made this recipe for the first time tonight and everyone in my family loved it -- and I have a finicky teenager! This meatloaf has a little kick to it -- just the right amount.

The boys loved it! I made this for my three boys (14, 12 and 7) they all had seconds, which is saying a lot considering two of them are pretty finicky eaters. I've made it several more times since and what I really like about this recipe is that you can't really mess it up with substitutions. I've gone without the mustard and cajun seasoning and have added spinach to substitute for the bell peppers. It turned out great every time. Tossing spinach and other veggies in there is a great way to make sure your kids eat some of the good-for-you foods that they may not care for when they are presented alone on the plate. This recipe has definitely become a family favorite.
I made this meatloaf and it came out delicious and very moist! This is actually the first time I ever made meatloaf and I will most definitely make it again!
I made this recipe last week and I invited a few friends over. I wasn't sure about it because I've never made meat loaf before. I should have made two because my friends loved it so much. I'm making it again right now for less people so I get to eat some!
