MEALS - Chicken Enchiladas

Ingredients
- 2-3 boneless, skinless chicken breasts
- 1 small can chopped green chillies
- 1/2 medium onion, chopped
- 1 can mild enchilada sauce
- shredded cheddar cheese
- 1/2 can (15 oz.) diced tomatoes
- 1/2 can refried beans
- 2 T taco seasoning
- Aztec flour taco shells

Preparation
Step 1
Preheat oven to 350 degrees. Spray a flat baking pan with non-stick spray. Set aside.
Boil chicken in small amount of water for about 15 minutes, or until done. Remove from heat and shred the chicken. In a sauce pan combine chicken, beans, tomatoes, onion, taco seasoning and chillies. Cook for 5-10 minutes.
Fill taco shells with chicken mixture and place in baking pan. Cover with tin foil and bake for 15 minutes or microwave until hot. Remove from oven or microwave and cover with enchilada sauce and shredded cheese. Return to oven to melt the cheese. Serve with the remainder of the enchilada sauce and sour cream.
