  • 16 ripe Italian prune plums
  • 2 tablespoons unsalted butter
  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons Armagnac or plum brandy

Preparation

Step 1

1. Preheat oven to 500 degreees

2. Halve and pit the plums. Lightly butter a nine-inch round or square baking dish with one tablespoon of the butter. Sprinkle one-half tablespoon of the sugar. Place the plums in the dish in a single layer, cut side up.

3. Sprinkle the plums with the remaining sugar, the cinammon, one tablespoon of the Armagnac, and dot with remaining butter. Place in the oven and bake about 20 minutes, until the plums are beingnning to brown around the edges.

4. Remove the plums from the oven, sprinkle with the remaining Armagnac and set aside to cool at least 15 minutes before serving. Sere warm or at room temperature.
