Ingredients

  • Base
  • 1 1/2 cups flour
  • 1/4 cup cocoa
  • 1/2 tsp salt
  • 1 cup sugar
  • 1 tsp baking soda
  • 1 cup warm water
  • 1 Tbsp apple cider vinegar
  • 1 tsp vanilla
  • 1/3 cup cooking oil
  • Topping
  • 1 beaten egg
  • 8 oz softened cream cheese (do not use light or Fat Free)
  • 1/3 cup sugar
  • 1/8 tsp salt
  • 6 oz chocolate chips

Preparation

Step 1

1) Preheat oven to 350.

Bottom:
2) In medium bowl, sift together flour, cocoa, sugar, baking soda & salt.
3) Add apple cider vinegar, vanilla, cooking oil & water. Stir until smooth.

Topping:
4) In seperate medium bowl, combine egg, cream cheese, sugar & salt. Beat well until smooth.
5) Stir in chocolate chips.

6) Place liners in mini-muffin tins.
7) Fill muffin tins 1/2 full with bottom ingredient.
8) Add 1/2 tsp of topping to each muffin tin.
9) Bake for 20 minutes, and let cool.
