Ingredients
- 6 boneless, skinless chicken breast halves
- 1 1/2 tsp fresh rosemary leaves, minced or 1/2 tsp dried
- 2 cloves garlic, minced
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 2 Tbsp extra-virgin olive oil
- 4-6 Tbsp white wine (optional)
- 1/4 cup balsamic vinegar

Step 1
1) Rinse the chicken & pat dry.
2) In small bowl, combine rosemary, garlic, pepper & salt; mix well.
3) Place chicken in large bowl. Drizzle with olive oil & rub with spice mixture.
4) Cover & refrigerate overnight.
5) Preheat oven to 450.
6) Spray heavy roasting pan with cooking spray.
7) Place chicken in pan and bake for 10 minutes.
8) Turn the chicken over. Stir in 3-4 Tbsp of water or white wine.
9) Bake 10 more minutes or until reaches internal temp of 160 & juices run clear.
10) If pan is dry, stir in 1-2 Tbsp of water or white wine.
11) Drizzle vinegar over the chicke in the pan.
12) Tranfer chicken to plates. Stir liquid in the pan, and drizzle over the chicken.
