Rosemary Chicken With Red Wine Cream Sauce

Ingredients
- 2 TB butter
- 2 TB chopped garlic
- 2 TB chopped fresh rosemary
- 8 oz. sliced mushrooms
- Cooking spray
- 4-8 chicken thighs, with or without skin & bones
- Salt & pepper, to taste
- 1/2 cup heavy cream or half & half
- 1/2 cup red wine

Step 1
Heat a large skillet over medium-high heat. Melt butter & sauté garlic for about 2 minutes, but not letting it brown. Add rosemary & mushrooms. Cook until mushrooms are tender, then remove mixture from pan. Season thighs with salt & pepper. Spray pan with cooking spray & add chicken thighs. Cook 7-10 minutes on each side. Add mushroom mixture to pan. Combine cream & red wine then pour over chicken thighs. Cover & simmer about 30 minutes, or until thighs are cooked through & sauce is thickened.
