- 4 cups sliced or frozen rhubarb, thawed
- 1/2 cup water
- 1 – 10 oz. pkg frozen, sweetened sliced strawberries OR
- 1-1/2 cup fresh strawberries
- 1/4 cup quick-cooking tapioca
- 1 cup sugar

Preparation
Step 1
In a 2 qt. microwave-safe dish, combine the fruit, water and tapioca. Let stand for 5 mins. Cover and microwave on high for 6 mins. Stir; cook 4 mins longer or until rhubarb is tender. Stir in the sugar. Cover and microwave for 2 mins. Serve warm or chilled. Freezes well also.
