This is the very definition of comfort food. Healthy. Good Protein. Mama has been eating this since she was a three year old girl in Gelves, outside of Sevilla. It is her favorite dish. ¡Te quiero mama!

Gordi’s Judias Verdes con Tomates 1 Picture

Ingredients

  • • ½ kilo green beans, cleaned and cut
  • • 1 large onion, diced
  • • 1 can fried tomatoes
  • • Salt
  • • Eggs

Preparation

Step 1

1. In pan cook green beans in salted boiling water (don’t cook completely, leave a bit crunchy). Reserve some cooking water. Drain.
2. In fry pan, saute onion in olive oil until golden with a pinch of salt
3. Add fried tomatoes. Reduce to low. Cook 5 minutes.
4. Add green beans and reserved water. Simmer. Cook for 6 or 7 minutes more.
5. Fry eggs. Add a fried egg to each plate of beans and serve.
