Step 1
TRIM ROAST OF EXCESSIVE FAT, MIX SEASONING TOGETHER AND APPLY MEDIUM COAT TO MEAT, PLACE IN TUPPERWARE TYPE CONTAINER AND CLOSE, PLACE IN FRIDGE OVER NIGHT.
COOK IN 350 F OVEN TILL AN IT OF 145 - 150F OR TILL DESIRED.
OR
SMOKE AT 225 F WITH APPLE, OAK, OR MAPLE FOR NO MORE THEN 4 HOURS OF SMOKE, CONTINUE COOKING TILL 150 F
